Italian Professional Series: Giovedì Gnocchi
Giovedì Gnocchi – A Taste of Italian Tradition with ALMA
In Italy, tradition fills the plate every day of the week—and Thursdays are for gnocchi. Inspired by the beloved phrase “Giovedì Gnocchi!”, this hands-on course brings a cherished Italian ritual to Bangkok, where dishes follow the rhythms of the week in trattorias.
Developed in collaboration with ALMA – The School of Italian Culinary Arts, this class is perfect for passionate home cooks and culinary upskillers looking to master the comforting charm of gnocchi through regional recipes passed down through generations.
Participants will craft three distinct styles:
Gnocchi di Patate al “Finto Sugo”
Gnocchi di Semolino alla Romana
Gnocchi di Pane (Knödel) alla Barbabietola Rossa
Served with Brodo di Cipolla Arrostita, inspired by the flavours of Northern Italy.
Gain hands-on experience in shaping, cooking, and plating gnocchi like a true Italian. Along the way, you’ll explore regional variations and timeless techniques—bringing both soul and sophistication to every bite.
