For a limited time, Chef Yuki Fukuda from Shimokitazawa Yakitori Derby brings his yakitori craft from Tokyo to Bangkok for an exclusive lunch and dinner experience.
There is no need to travel to Japan or wait in long reservation queues. This special event offers a rare opportunity to experience authentic yakitori prepared by the chef himself, right here in Bangkok.
At the heart of the menu is a specially raised chicken developed through a unique two-stage holistic farming approach designed specifically for yakitori. The birds are slow-grown with natural feed rich in phytonutrients, allowing the muscles to develop fully and the meat to build deeper flavour and natural umami.
During the final stage, the chickens are carefully finished with a controlled feeding programme that encourages balanced fat development, resulting in meat that is firm, juicy, and beautifully aromatic when grilled over charcoal.
For this special occasion, Chef Yuki Fukuda will present a 16-course omakase yakitori experience, highlighting different cuts of chicken and the craftsmanship behind each skewer. Each course is thoughtfully prepared to showcase the balance of texture, flavour, and technique that defines true yakitori.
