Fukuda is originally from Saga Prefecture. After graduating from high school, he found work at a factory producing automobile parts. Although the job offered stability, he did not feel fulfilled. With a strong desire to “make a career out of what he loves,” he decided to enter the food and beverage industry at the age of 26.
He began working at the yakitori restaurant Rokakudo in Hirao, Fukuoka Prefecture. When asked why he chose yakitori among many possible paths, Fukuda said, “I thought there might be an opportunity for someone like me who started becoming a chef later in life.”
After six years of rigorous training, he moved to Tokyo at the age of 32 with the goal of opening his own restaurant. However, as he was unfamiliar with Tokyo, he worked at Hinadori Fujino in Mitaka, operated by Good Fat Co., Ltd. (Musashino, Tokyo; CEO: Ryota Okamura), whom he had known from his time in Fukuoka. During this period, he conducted detailed research and preparation before opening his own restaurant.
