Croissant Technique

Learn how to create perfectly layered croissants in this intensive one-day hands-on class for home bakers and culinary enthusiasts. You will be guided through every key stage of the process — from dough preparation and butter block handling to lamination, folding, shaping, proofing, and baking.
Students will practise building layers through proper folding and resting techniques, then shape their own croissants ready for baking. At the end of the class, you will taste freshly baked croissants and evaluate the final texture and structure. Each student will also take home 10–12 shaped croissants to proof and bake at home, so you can enjoy your results fresh from your own oven.
