Italian Bakery & Pastry Intensive Weekend Programme
Explore the fundamental principles of classic and traditional Italian baking and pastry. This intensive weekend programme begins with the essentials, guiding students through the preparation techniques and methods used in both modern and traditional pastries. Participants will also learn how to replicate and manage recipes for baked goods and desserts within an authentic Italian pastry and bakery context.

Academic Details

You will learn:

  • Produce some of the most traditional Italian fresh pastry recipes
  • Learn to utilise various basic pastry recipes to create an array of products, including tarts and cookies
  • Make contemporary Italian pastry recipes based on mousses and light creams
  • Learn how to make simple chocolate decorations
  • Understand the characteristics of Italian gelato and the processes involved in its production
  • Explore the principles of sourdough and learn to apply them to recipes for panettone and other common leavened products in Italy

Course outcome:

  • Use basic Italian Pastry preparations including: shortcrust pastry, sponge cake and creams
  • Apply basic recipes for developing fresh and room temperature cakes and cookies
  • Manage pastry leavened doughs
  • Identify qualities in gelato by making it and construct a sorbet recipe

Achievement:

  • Certificate of Completion by ALMA – The School of Italian Culinary Arts

Course fee:

Application fee:

  • THB 1,500 – Thai students
  • THB 2,500 – International students

Uniform:

  • THB 3,250 per set (Chef Jacket, Chef Cap, and Apron)

Toolkit:
