Italian Cuisine Intensive Weekend Programme
Gain a fundamental understanding and skills in Italian cuisine and take your first steps toward becoming a professional chef with this weekend programme. Developed and instructed by a Chef Instructor from ALMA - The School of Italian Culinary Arts, such a programme covers key ingredients, appetisers, set menus, and more. Students will earn a significant opportunity to explore the world of rich Italian cuisine and learn to craft an array of Italian dishes without compromising authenticity.

Opening intake:

Duration:

  • 11 weeks on every Saturday

 

Days per week:

  • 1 day/week

 

Hours per day:

  • 8 hours/day

 

Total hours:

  • 88 hours

 

Delivery language:

  • Italian with translation

 

Qualified age:

  • Minimum 18 years old

 

Suitable for:

  • Amateur, upskillers, reskillers and Italian cuisine enthusiasts
Academic Details

You will learn:

  • Introduction to Italian cuisine’s tools, equipment, and cooking techniques
  • Cold and warm starters
  • Dry pasta and key Italian sauces
  • Fresh pasta making and shaping, sauces and seasonings, and stuffed pasta making
  • Risotto and rice-based menu preparation
  • Fish, seafood, and meat
  • Italian set menu

 

Course outcome:

  • Earn a well-rounded overview of Italian culinary traditions, cultures, and flavours
  • Acquire quintessential Italian cooking skills and professional techniques
  • Profoundly understand key ingredients and seasonings of Italian cuisine
  • Able to cook an array of highlight Italian dishes without compromising authenticity

  • Certificate of Completion by ALMA – The School of Italian Culinary Arts

Course fee:

  • THB 120,000

 

Application fee:

  • THB 1,500 – Thai students
  • THB 2,500 – International students 

 

Uniform:

  • THB 3,250 per set (Chef Jacket, Chef Cap, and Apron)

 

Toolkit:

  • Free of charge (Toolkit will be provided for in-class usage.)
