In the world of Yakitori—Japanese grilled chicken skewers—the “ingredient” is the heart that determines deliciousness from the very first touch of the tongue. This marks the debut of a “Specially Designed Farm” with a rearing program specifically engineered to meet the demands of Yakitori chefs. It features a two-phase rearing plan that merges natural ways with nutritional innovation. 

100-Day Holistic Rearing 

  • What is it? This is “Holistic” poultry farming that prioritizes Animal Welfare. Chickens live in an environment close to nature with freedom of movement and zero stress. Crucially, they are Slow-grown for 100 days—significantly longer than industrial broiler chickens, which are typically raised for only 40–45 days. 
  • The Goal: Holistic rearing (rich in phytonutrients + anserine) for Yakitori focuses on “system-wide care” to develop meat quality. Instead of rapid growth, it emphasizes bird health, nutritional value, and flavor. 
  • The Texture: In the Japanese culinary scene, this is similar to the concept of Jidori chicken. Raising them longer allows the muscles to develop fully, resulting in a firm texture and high umami content.

Rich Phytonutrients 

  • What is it? This involves supplementing chicken feed with Phytoextracts such as essential oils, garlic extract, rosemary, and local herbs, vegetables, grains, and algae. 
  • Benefits: These substances act as a “natural immunity,” keeping the birds healthy without the need for antibiotics (Antibiotic-free). They also function as antioxidants that transfer to the meat, improving the quality of both the fat and the muscle. 

Anserine 

  • What is it? Anserine is a Dipeptide (a type of amino acid) found in high concentrations in the muscles of poultry, especially in migratory birds or active chicken breeds. 
  • Functional Benefits: The 100-Day Holistic Rearing allows chickens to move freely and accumulate more anserine than those in confined spaces. It is a powerful anti-fatigue antioxidant—the same key nutrient found in essence of chicken—which helps reduce fatigue and improves blood circulation. 
  • Flavor Profile: In Japanese cuisine, it is widely believed that meat high in anserine possesses deeper umami. 

Thai Native Chicken: A Disease-Preventing Food 

According to the research titled “Thai Native Chicken as a Potential Functional Meat Source Rich in Anserine, Anserine/Carnosine, and Antioxidant Substances,” published in the journal Animals (2021) by researchers from Khon Kaen University and the University of Tsukuba, Japan: 

What is Functional Food? 

It refers to food products that, when consumed, provide health benefits beyond basic nutrition and taste. They improve the immune system, regulate body functions, slow down organ degeneration, and help prevent or alleviate chronic diseases. 

Using Nuclear Magnetic Resonance (NMR) to detect neurotransmitters and antioxidants, the study found: 

  • Nutrient Rich: Chickens with native bloodlines (100%, 50%, and 25%) had significantly higher levels of Anserine and Carnosine than commercial broilers. 
  • Superior Antioxidants: Extracts from Thai native chicken meat showed higher antioxidant activity. 
  • Purity Matters: While crossbreeds contain these nutrients, the 100% Thai Native Chicken group exhibited the most outstanding levels.

Anserine and Carnosine: Science-Backed Protectors for Brain and Body
